Pumpkin and Carrot Loaf

Delicious and nutritious, this loaf is super tasty, easy to make and a great snack option.


1 1/2 cups of wholemeal self-raising flour 1/2 cup quinoa flakes 1/4 cup firmly packed brown sugar 1 tsp ground turmeric 1/2 tsp ground mixed spice 1cup grated carrot 1 cup grated pumpkin 1 green apple grated 2 eggs 1/3 cup reduced-fat milk 1/3 cup canola oil 1tsp vanilla extract 2tbsp pepitas

Method: 1. Preheat oven to 180C, grease and line loaf tin.

2. Combine dry ingredients in large bowl. Whisk eggs, milk, oil and vanilla in a small bowl.

3. Stir into flour mixture and spoon into tin. Place pepitas on top and bake for 50-55 minutes.

4. Cool for 5 minutes before transferring to wire rack. Enjoy!
