Mint Chocolate Power Bites

Fuel your ride with 16g of Carbohydrates per bite
Ingredients (makes 8):
1/2 cup cashews raw
1/2 cup almonds raw
1/3 cup cacao or cocoa powder
140g Medjool dates, pitted
1/4 tsp peppermint extract
1/4-1/2 desiccated coconut
1/4-1 tsp salt, according to taste
Method:
Place nuts into food processor and blend until finely ground.
Add all other ingredients in food processor and blend until crumb like consistency and sticky. Add 1tbsp of water at a time if too dry.
Use your hands to shape the mixture into 8 balls. Roll the balls in the extra coconut and place in the fridge to set.
