Mint Chocolate Power Bites


Fuel your ride with 16g of Carbohydrates per bite


Ingredients (makes 8):

  • 1/2 cup cashews raw

  • 1/2 cup almonds raw

  • 1/3 cup cacao or cocoa powder

  • 140g Medjool dates, pitted

  • 1/4 tsp peppermint extract

  • 1/4-1/2 desiccated coconut

  • 1/4-1 tsp salt, according to taste

Method:

  1. Place nuts into food processor and blend until finely ground.

  2. Add all other ingredients in food processor and blend until crumb like consistency and sticky. Add 1tbsp of water at a time if too dry.

  3. Use your hands to shape the mixture into 8 balls. Roll the balls in the extra coconut and place in the fridge to set.
