4 fillets of white fish (Basa works well)
1 Taco kit
1 cup of plain flour
1 cup of lettuce, shredded
2 tomatoes, finely diced
1/2 tin of corn
Light sour cream to taste
1 tbsp of olive oil
If using frozen fillets, defrost and dry fish with kitchen roll.
Place the flour and taco seasoning in a bowl and mix.
Cut fish into strips and coat it in the flour mixture.
Meanwhile, heat a non stick frying pan on medium heat. Add a tablespoon of olive oil.
Pan fry the fish in 2 batches until cooked.
Place the lettuce, tomato and corn in individual bowls at the table.
Heat the taco shells according to the packet instructions.
Build your taco by placing some lettuce, tomato, corn, fish, salsa and a small dollop of sour cream on a taco shell. Enjoy!
