Eggs and ham rice cakes

Fuel your exercise with 30g of carbs per cake!

Ingredients (makes 12):

  • 2 cups uncooked sushi or short grain rice

  • 3 cups of water

  • 225g lean leg ham

  • 4 large eggs

  • 2 tbsp soy sauce

  • 1 tbsp brown sugar

  • 2 sprinkles parmesan cheese


  1. Combine the rice and water in a rice cooker.

  2. While the rice is cooking, chop up the ham.

  3. Beat the eggs in a small bowl, scramble at high heat in a non stick frying pan.

  4. In a large bowl, combine the cooked rice, ham and eggs. Add the soy sauce and sugar to taste. Mix well, then press rice mixture into a 20cm baking dish to a thickness of 4cm.

  5. Top with brown sugar, salt and parmesan to taste.

  6. Cut and wrap individually.
