Ingredients (Makes 18 serves):
1/2 cup plain flour
1/2 cup self raising flour
1 tsp bicarbonate of soda
3/4 cup cacao or cocoa powder
1 1/4 cup caster sugar
2 tsp vanilla essence
2 tbsp canola oil
200g Low Fat Greek Yoghurt 140g Apple puree
Icing sugar for dusting
1. Preheat oven to 180C, grease and line 2L rectangular shallow baking tin.
2. Stir sifted flour, bicarbonate of soda and cacao or cocoa powder into a large bowl.
3. Combine eggs, sugar, vanilla essence, oil, yoghurt and apple puree in another bowel.
4. Add wet to dry ingredients and mix well. Spread into baking tin and bake for approximately 30 minutes, until skewer comes out clean. Once cooled on a wire rack, dust with icing sugar.
For gluten and dairy free options: replace flour with gluten free flour and yoghurt with coconut yoghurt.
